Elegant food when meeting quilting dealines

I have been working furiously in my studio.  I have a few deadlines coming up that I am madly working towards.  So in the next few days I will have some little updates to  show you of my work.  I am so excited to see how this art quilt is progressing.

While I was in the middle of quilting yesterday my 12 year old young man came in and said I need a plate of food for the social tonight.  This time of the year is wonderful in so many ways but the extra events and activities can sometimes just be too much.  My thinking cap had to come on quickly for a plate that 12 year old kids would like,  could be made fast with what we have in the cupboard and not break the bank. I came up with this lifesaver :)


A bread platter


Put on the platter 3 different types of bread.  



I have used a sliced French stick with garlic oil drizzled on it and then grilled, 



cheese grilled on top of normal sandwich bread and cut into fingers 



and made some bread sticks form out favourite bread recipe. (Just knead the dough and shape and put in oven. No need to rise)


Make 3 delicious dips for dipping sauces.


Dairy and gluten free dip

4 T coconut cream
4 T plain yoghurt
1/2 of a small onion
1/2 t gluten free vegetable stock

Grate the onion and then combine all of the ingredients together and then chill in the fridge



Humus

1/2 can of chick peas
juices of 2 lemon
3 cloves of garlic
splash of oil
3 T Tahini paste
salt and pepper to taste

Put all the ingredients in a food processor and blend till creamy.  Add more oil, lemon or chick peas juice if needed to thin mixture.



Refined sugar free Thai chilli sauce

3 T agave syrup (you could use runny honey)
2 cloves of garlic
2 T oil
a pinch of chilli powder
1-2 T apple cider vinegar or lemon juice

Mix all together.  Put more or less vinegar/lemon in depending on your taste.



Serve on a platter

  1. Good idea. Those bread sticks in particular look like a good idea for filling up lunch boxes (the bane of my life and I only have two children)

    1. They are so yummy and so easy. I solved the lunch box dilemma by never making their lunches for them. I tell them what's available and then they make their own lunches.
